A firm favourite. An extremely tasty dish that comes with a kick in every mouthful! No heat, just zing. Goes well with rice.
Ingredients
- 500G of chicken breast
- 1 tsp of salt
- 1 tsp of cajun spice
- 1 tsp of paprika
- 1/2 tsp of white pepper
- 1/2 tsp of black pepper
- 1/2 tsp of oregano
- 1/4 tsp of garlic powder
- 4x fresh lemons
- 1/2 cup of olive oil
Utensils
- Lemon squeezer
- zip lock bag (large enough to contain your chicken)
Method
Part 1
- Cut the lemons in half and squeeze out all the juice into a cup, then remove all pulp and seeds.
- Combine half of the dry spices in the zip lock bag along with all of the lemon juice and olive oil.
- Mix well together in the bag, then add the chicken breast.
- Seal the bag and place in the fridge overnight to marinade.
Part 2
- Heat a frying pan and transfer the chicken from the bag to the pan, then pour in 1/3 of the marinade sauce.
- Coat the chicken with the unused half of the dry spices, then cover the pan with a lid.
- Turn chicken as appropriate until cooked through (the lid will both help with the heating all the way through and keeping the chicken moist).
Serve.
