Cajun Chicken

A firm favourite. An extremely tasty dish that comes with a kick in every mouthful! No heat, just zing. Goes well with rice.

Ingredients

  • 500G of chicken breast
  • 1 tsp of salt
  • 1 tsp of cajun spice
  • 1 tsp of paprika
  • 1/2 tsp of white pepper
  • 1/2 tsp of black pepper
  • 1/2 tsp of oregano
  • 1/4 tsp of garlic powder
  • 4x fresh lemons
  • 1/2 cup of olive oil

Utensils

  • Lemon squeezer
  • zip lock bag (large enough to contain your chicken)

Method

Part 1

  1. Cut the lemons in half and squeeze out all the juice into a cup, then remove all pulp and seeds.
  2. Combine half of the dry spices in the zip lock bag along with all of the lemon juice and olive oil.
  3. Mix well together in the bag, then add the chicken breast.
  4. Seal the bag and place in the fridge overnight to marinade.

Part 2

  1. Heat a frying pan and transfer the chicken from the bag to the pan, then pour in 1/3 of the marinade sauce.
  2. Coat the chicken with the unused half of the dry spices, then cover the pan with a lid.
  3. Turn chicken as appropriate until cooked through (the lid will both help with the heating all the way through and keeping the chicken moist).

Serve.
